Black Bean Veggie Burgers

The best homemade veggie burger recipe. Meat eater approved.

Ingredients
  

  • 1 16 oz can Black beans Use low-sodium black beans for a healthier alternative
  • 1/2 Green bell pepper – diced
  • 1/2 Small onion – diced
  • 2 cloves Garlic – peeled, diced
  • 1 Egg; beaten
  • 2/3 cup Bread crumbs or Panko crumbs
  • 1 tablespoon Chili powder
  • Salt and pepper to taste

Instructions
 

  • Drain liquid from beans; place in strainer and rinse. Dry.
  • Place beans in bowl and mash with fork or hands.
  • Place bell pepper, onion, and garlic in a food processor until finely chopped. Or dice by hand.
  • Add mixture to beans.
  • Add spices. Mix.
  • Add beaten egg. Mix.
  • Stir in crumbs.
  • Form burger sized patties. Cook.
  • Recomemmended: Individually package patties in foil and freeze before cooking. This makes the patty easier to cook on a grill.
